Old Fashioned Peanut Butter Bread

This Peanut Butter Bread recipe was plucked from the Settlement Cook Book written by Lizzie Black Kander. A middle class woman and a figure in the Progressive Era reform movements, Kander wrote the cookbook in 1901 to help fund the Milwaukee Settlement House.

The Settlement House movement was driven by established US citizens to help settle and assimilate immigrants moving in to the country. Kander and other women created homes in the middle of immigrant communities of large cities where they would set up shop to teach immigrants American methods of life so they could adjust to life in their new home. They taught everything, even household tasks from cleaning to cooking. The settlement houses also provided assistance to families in need and gave educational opportunities to children.

Much like Mary Randolph, just a century later, Kander’s family connections gave her opportunities to solicit interest and funding in her settlement home and eventually her cookbook.

Peanut Butter Bread Recipe

Ingredients:
  • 2 cups flour
  • 1 1/4 cups milk
  • 2/3 cup peanut butter
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
Directions:

Add milk to peanut butter and blend well. Then add dry ingredients and beat thoroughly. Bake in a greased loaf pan at 350 degrees for 45 minutes. Allow to cool and then slice up to serve! (I found this tasted even better the second day.)
